Home-fried potato (start from raw, fried in butter), topped with two slices of medium swiss cheese, topped with three eggs, sprinkled with salt/pepper/dehydrated habanero peppers...YUMMY!

Ooooh. A fat-free snack?
I cooked up a spicy sausage, hot links, chicken dish. I boil them down for about half a day (4-6 hours usually).
I add other spices, tobasco (a given ), and 10 or so cubes of chicken and beef bouillon.
By the time I finish, I remove over half of the product, for later. Then I thin it down a bit and pour it over rice.
Not really a gumbo, but I call it a Yankeeized Cajun dish. Two of our children love it, as well as my wife and I.
Sadly, our other two children aren't 'spicy/Cajun' infiltrated.

We had Red Beans and Rice last night. No boudan to go in the pot, but there is a local company that makes sausage and they make a fire sausage (Real bits of Jalapenos in there) and it is a pretty good substitute.
